The Beef Shin ‘Hammer’ is a dramatic cut of meat for serious meat lovers! Cut from the back calf of the cow, it owes its name to its shape, which is reminiscent of a hammer. It is a heavily marbled cut that needs to be cooked low and slow. This spectacular cut is perfect for cooking in the smoker then shredded or sliced to feed a crowd.
