How to Cook a Standing Rib Roast
Method
Step 1: Preparation
Seasoning: Liberally season the roast with salt, pepper, and any other desired herbs or spices. Let it sit at room temperature for about an hour before cooking.
Preheat oven to around 230°C.
Step 2: Roasting
Place the roast, bone-side down, in a roasting pan. Start roasting at the high temperature (230°C) for about 15-20 minutes to sear the outside and develop a nice crust.
Step 3: Lowering the Temperature
After the initial sear, reduce the oven temperature to around (160°C) for the remainder of the cooking time.
Step 4: Cooking Time
Calculate Cooking Time: The cooking time depends on the size of your roast and how you like it done. A general guideline is about 15 minutes per 450g for medium-rare (internal temperature of about 52°C).
Use a Meat Thermometer: For accuracy, use a meat thermometer inserted into the thickest part of the roast (away from the bone) to check for doneness.
Step 5: Resting
Once cooked to your desired doneness, remove the roast from the oven and tent it loosely with aluminium foil. Let it rest for at least 15-20 minutes before carving.
Step 6: Carving
Carving the Roast: Slice the roast against the grain into desired thickness. Serve with your favourite sides or our AME house made sauce range and enjoy!
