Pork Satay
Serves 4
Method
- 1 tablespoon peanut oil
- 1 brown onion, sliced
- 600g pork tenderloin, sliced
- 1 teaspoon cumin powder
- 250ml satay sauce
- 370ml coconut cream
- 4 cups cooked jasmine rice
- ¼ cup coriander leaves, chopped
- ¼ cup fried shallots
- 1 long red chili, sliced
Method
Step 1
Heat oil in a frypan over medium heat and cook onion for 8-10 minutes until softened. Add pork to the pan and season with cumin powder and salt flakes and cook for a further 5 minutes.
Step 2
Add the satay sauce, coconut cream and 1 cup (250ml) water, simmer for 30 minutes until thickened and pork is cooked.
Step 4
To serve, divide rice amongst bowls, top with satay pork, scatter with coriander leaves, fried shallots and chili. Enjoy.
